Update: I was wrong about weighing beans, and a scale in my kitchen proved it
For years I scooped my beans with the same old tablespoon and swore the cup came out fine every morning. Then a friend who roasts at home in Sacramento asked me to weigh my dose for one single brew, and I did it just to prove her wrong. My usual scoop was giving me 21 grams some mornings and 15 on others, which is a huge swing in the cup. That was the thing nobody around here seems to say out loud: the scoop itself is the problem, not your grind or your machine or the water. I tested it over 10 straight days with a $20 kitchen scale, and the days with a steady 18 grams tasted way more even, no sour mornings, no bitter ones. Now I get why people here keep saying to weigh first and adjust everything else after. Has anyone else switched to a scale and found their old scoop number was off by that much?
