I was at this spot on Alberta St in Portland and the barista weighed my dose, pulled a shot, tasted it, and dumped the whole thing down the drain. He did this 3 times in a row while I just stood there wondering if he was messing with me. On the 4th try he handed it over and said the first few pulls were 'gushing' because the grinder needed to settle. I got home, tried the same thing with my setup, and realized my shots have been pulling way too fast this whole time. Anyone else had a barista shame them into fixing their whole routine?
Tosses three shots? That guy was either showing off or just wasting your time and his beans. A grinder needing to "settle" between pulls is mostly a thing when you just changed the setting or the beans are super fresh, not an every morning ritual. Weighing your dose and timing your shot at home is what actually matters here, and you can fix that in one afternoon with a cheap scale and a timer. If your shots run in 15 seconds and taste sour, yeah, you were drinking junk, but that barista didn't teach you that, your own taste buds did once you finally paid attention.
