Why does nobody warn you about stale beans ruining a perfect pour?
Tbh I pulled a shot from a bag I opened 11 days ago in my Chemex and it tasted like cardboard, then a roaster in Denver told me most beans peak at day 4, has anyone else been blindly trusting the 'best by' date without checking their actual roast date?

Got a scale and started weighing beans before I grind, plus I write the roast date right on the bag with a sharpie now... game changer. Once I hit day 5 or 6 I switch to cold brew or just accept it's gonna be a little flat.
