I spent years saying cold brew just tasted like watered down iced coffee with extra steps, and I'd tell anyone who listened. Then a barista at a place on East 6th handed me a small cup of theirs made with a Guatemalan bean they'd steeped for 18 hours, and it tasted like cocoa and orange peel with none of that cardboard bite. I went home, tried my own batch with a coarse grind and a 1 to 8 ratio, and it came out bitter and flat, so clearly I was doing something wrong. Now I'm two months in and still chasing that cup, which is annoying because I talked so much trash about it. Anyone got a steep time and ratio that actually works, or do I just need better beans?
