Overheard a builder say mud doesn't need to be mixed that long

I was grabbing coffee near the jobsite on 5th Ave last Tuesday and heard a foreman tell a new guy that 2 minutes of mixing is plenty for any compound. Has anyone else run into problems with air bubbles or clumps from under-mixing, or is it just me being too picky?

That cheap pre-mixed stuff is what really causes the problems.

Those name brand mixes use the same cheap syrups just in a different bottle.

Wait, like even the higher-end bar syrups are just the same corn syrup mix? That's actually wild to me. I always figured the expensive stuff had at least some real sugar or something in it.
