A client in Austin tried to pay me with 'exposure' for a $900 project
We were at a coffee shop on South Congress, and he said the work would look great in his portfolio. I just walked away, but how do you guys handle those conversations before they even start?

I read this post on a design forum last month where this freelancer said she started putting "Payment due on receipt" and "portfolio rights negotiated separately" right in the first email. She said it stopped the stupid requests before the meeting even happened. Seems like if they see that upfront they either ghost or actually treat you like a professional. How do you work those terms into your initial conversations without sounding like a jerk?

My portfolio only accepts cash, checks, or bank transfers (exposure doesn't pay my rent).

Exposure doesn't pay my rent" is the perfect line. It also doesn't cover you when a client tries to pay with a bad check.
