A guy in Memphis said my ribs were 'cheating' because I wrap in butcher paper, and I can't let it go
Was at a backyard cook-off in Memphis about 3 months back, just a small thing, maybe 14 guys with drums and offsets, and this older dude named Ray walked up to my table while I was slicing. He poked at the bark and said, 'Butcher paper is just a crutch for people who can't hold temp.' I laughed it off at the time, but it's been eating at me since. Here's the thing though, I've cooked the same St. Louis cut both ways, naked and wrapped, on the same 22 inch drum, same rub, same 250 degrees, and I'd put my wrapped racks against his any day. Ray's ribs were fine, don't get me wrong, but the man stood there for 20 minutes fighting flare-ups on a $1500 offset while I was already resting mine in a cooler. To me that's not tradition, that's just making it harder on yourself for bragging rights. Curious if anyone else has run into this wrap shaming thing, because I swear it's worse in Tennessee than anywhere I've cooked.
