PSA: Found a burnt brisket at Lockhart's Smitty's Market last Saturday

Walked into Smitty's in Lockhart around 2 PM last Saturday and the pit guy was pulling a brisket that looked like charcoal on the outside. He just shrugged and said 'black bark is flavor' but when he sliced it, the meat was dry and crumbly. I asked how long it rested and he said only 20 minutes. Does anyone else see pitmasters rushing rest times at famous spots or was this just a bad day?

Come on, "black bark is flavor" is legit though. 20 minutes rest is short but maybe they were in the weeds, that place gets slammed. I've had Smitty's brisket that was perfect and some that was a little dry, it happens when you're cooking that much meat.

Used to be a bark snob, thought it had to be clean and dark red. A few years back had a slice from a place in Lockhart that looked almost burnt. Juiciest brisket I've ever had. Changed my whole view on it. Black bark plus good fat rendering beats pretty bark every time.
