Showerthought: I used a cheap metal bowl to fix my temperature swings

My old offset smoker in the backyard would have wild temperature changes, sometimes 50 degrees up or down in 10 minutes. I was about to buy a whole new firebox. Last month, I saw a guy at a cook-off in Austin put a metal mixing bowl full of water right next to the coals. I tried it with a $5 bowl from the grocery store. It acts like a heat sink and my temps now stay within a 20 degree range for hours. Has anyone else used something simple like this to steady their fire?

That "metal bowl full of water" trick is a classic move. It's basically a cheap thermal battery for your fire. More people should try simple fixes like that before buying new gear.

Honestly, I've seen that trick save a lot of campers from a cold night. Sure, rust is a thing, but a quick wipe down fixes that. People just need to try the simple stuff more often.
