Wrote off pellet smokers for pitmasters until I counted 14 cooks in a row without a stall
I always told folks pellet rigs were for backyard guys who wanted to nap through a brisket, then I ran one for a 60 person job in Austin and logged 14 straight cooks with no stall and steady 225 the entire time. What sold me was the overnight pork butts at hour 9 when I'd normally be up messing with the firebox, and the bark came out damn near the same as my offset. Anybody else get converted after seeing the actual consistency numbers, or am I just getting lazy?
