Client said my moodboard looked like a ransom note, fair enough

I had this branding gig back in March for a small coffee shop in Portland, and I spent 3 days cramming every font I liked into one board, total mess. The owner looked at it and said it looked like a ransom note, which stung but honestly she was right. I switched to showing just 2 typefaces and 3 colors max since then, but how do you guys handle clients who want more options without turning it into a dumpster fire?
