Can we talk about how I thought kombucha scobys were overhyped nonsense?
My wife got into brewing kombucha back in 2022 and I told her it was a waste of counter space and we'd just end up with vinegar. I stayed skeptical for almost 8 months while she kept a big glass jar going on our kitchen counter in Sacramento, feeding it sugar and tea like a pet. Then she handed me a batch that had been going for 11 days with some peach added at the end and it was better than the 4 dollar bottles I was buying at the store. Now I'm the one checking the pH strips and yelling at her if she forgets to burp the bottles. Anyone else get dragged into a ferment they swore they'd never touch?
Honestly the scoby thing is still kinda gross to me, like a weird rubbery pancake floating in there. But my cousin swears her home brew beats store stuff too, so maybe I'm just not ready to admit defeat yet. Peach at the end sounds like a smart move though.
