Wait, 100 jars since March? That's insane, I love it. I hit my "okay this is real" moment at like jar 40 of strawberry jam, when I realized I was literally planning my entire week around when the fruit would be ripe enough to pick. My pantry looks like a tiny grocery store now, and my friends straight up ask me for pickles instead of buying them, which feels both amazing and slightly weird. I remember logging my 75th jar of salsa and just sitting there counting the lids like a crazy person. Once you start naming your ferments (I have one called "Barry" that turned out super spicy) there's no going back.
