I finally saw my kombucha SCOBY hit 2 inches thick

It happened after my third batch this winter, and now I'm worried it's too big for my gallon jar. Has anyone had to split a monster like this?

My last SCOBY was over an inch thick and I just tore it in half with clean hands.

Oh man, that's a serious pancake. Mine got so thick once I had to use a bread knife on it, felt like a weird science experiment.

Oh man, "bread knife" is wild but honestly I get it. I had one that got so thick and rubbery I ended up using kitchen shears on it. Felt like cutting up a wet shoe sole or something. What worked for me was just tearing it apart with my hands after I washed them real good - no need for knives or scissors. I split mine into three pieces and now I have three different jars brewing. The original chunk is still going strong and the new ones took off faster than I expected.
