My kimchi jar popped its lid at 2am and painted my ceiling

I was sleeping through a thunderstorm in Austin when the glass lid shot off my 5 gallon crock and splattered brine everywhere, so now I'm wondering if anyone else burps their ferments on a timer or just lets fate decide.

Five gallons is a lot of cabbage to have going in the first place. Most people use a half gallon jar for a reason, and that reason is exactly what happened to you. A timer sounds like overkill when you could just crack the lid every morning with your coffee. Ferments are pretty forgiving as long as you don't seal them tight like a canning jar. You basically found out the hard way that a big crock needs a lot more room to breathe. Maybe just put it in the garage next time and let fate handle the mess out there.
