My uncle swore I needed an airlock for kimchi and he was flat out wrong
My uncle Bob has been fermenting stuff in his garage in Akron for like 20 years, so when I started my first batch of kimchi I called him up and he told me I absolutely had to buy a $15 airlock or it would spoil. I bought two of them on his advice and then did some reading, and it turns out kimchi is a salt brine ferment that does fine in a plain jar with a weight on top. The airlocks sat in a drawer for a year and my kimchi came out great, crunchy and sour after about 4 days on the counter. Now I wonder what other advice from him I followed without checking. Anyone else get steered toward gear they never actually needed?
Why does every hobby have that one guy who acts like you need the fancy gear or it won't work? I rode bikes for years with a cheapo helmet and a $30 pump, then some guy at a shop told me I needed a $200 torque wrench or I'd strip my frame. Same thing happened when I got into bread baking, bought a proofing basket and a lame and all this stuff, then just used a bowl and a knife and it worked fine. It's like the gear becomes a stand-in for the skill, and the longer someone's been doing it, the more they swear by their setup.
