Overheard a guy at the hardware store say he uses his fermentation station as a proofing box for bread dough, and it blew my mind.

Honestly that seems like overkill to me. My oven with the light on works just fine for proofing. It feels like using a fancy tool for a simple job.

Oven lights can work but they're pretty inconsistent for temperature. A proofing box gives you steady warmth and humidity which really helps with rise. It's not just fancy, it's about control for better bread lol.

Poor man's fermentation station" is genuinely funny, I might have to steal that one. @john_kim49 probably has a point about the inconsistency though - last time I used my oven light for yogurt the batch turned out weirdly sour and I think it was because the temp kept bouncing around.
