PSA: Had a talk with a butcher who said my kimchi was too wet
He told me I was rushing the salting step and squeezing out only half the water I should. Anyone else been told their ferment liquids are off ratio and had to adjust their whole process?

Nah, wet kimchi just means it ferments faster, that's not a bad thing.

Adding more brine always worked for me when my kimchi got too dry, @jamesc79... it keeps the fermentation steady without going too fast.
