Oh man, that brine creep trick is a game changer. I had someone show me that last summer and it totally fixed my pickle problems. I used to have jars where the brine would evaporate and leave the top veggies all dry and sad looking. Now I just add that extra layer of water and it keeps everything submerged perfectly. Seriously such a simple thing but it makes a huge difference when you're trying to keep your ferments from getting moldy.

Huh, I guess I had the opposite experience with that brine creep trick. For me it made things worse because the extra water just diluted my salt concentration and suddenly I was fighting kahm yeast on top instead of mold. I switched to using glass weights and a wide mouth jar and honestly haven't had issues since. Different strokes I guess, but I think a lot of it depends on your kitchen temp and how tight your lid is.

@lilyt23 nailed it about the brine creep trick. I tried that last year after ruining three batches in a row with mold on top. The key for me was using a small ziplock bag filled with extra brine as a weight on top of the veggies. That way even if the water level drops a bit the bag keeps everything pressed down. It's such a dumb simple fix but it saves you so much headache. I also started keeping a spray bottle of vinegar nearby to mist the sides of the jar before sealing. That extra acid layer really stops the mold from forming in the first place.
