The guy at the Portland Fermentation Festival said my 3 week kimchi smelled like a crime scene
I was pouring samples at the booth next to his last October and he leaned over and told me that to my face, then made me smell his 6 month batch to prove his point. Now I bury my jars in the back of the closet for at least 8 weeks and honestly the difference is not even close. How long do you let yours go before you actually trust it?
Did you ever smell something so bad you kind of respected it? My uncle used to make kimchi in a shed behind his house and one summer it got so ripe the neighbor called the city thinking something died in the yard. He was weirdly proud of that batch too, said the smell was the whole point. I never got into making it myself but I do the same closet trick with my hot sauce now, let it sit way longer than the recipe says because young batches just taste flat to me. Funny how the stuff that scares people off at first ends up being the good stuff.
