Got burned on my first logo design because I didn't ask enough questions

Met a guy named Mark at a coffee shop in Austin. He wanted a logo for his new food truck. I quoted him $100 just to get the work. He agreed, then kept asking for more sketches and changes. After the third round, he ghosted me. Never paid. How do you handle scope creep on a first gig?
